Katak is a traditional Bulgarian dairy delicacy, crafted the old-fashioned way from the richest, thickest milk available. This product is most widespread high in the mountains of southern Bulgaria — particularly in the Rhodope region, where it has been a beloved local specialty for generations.
The traditional method of making Katak in this part of Bulgaria involves placing the mixture into a clay vessel at a constant temperature, lowered into a well. There, it slowly matures over a long period — in some cases for more than six months. During this aging process, the milk thickens and develops a distinctive, pleasantly salty flavour with a deep, complex character unique to this mountain tradition.
When ready, the clay jug is broken open and the Katak is enjoyed immediately, straight from the vessel — no further processing needed. This raw, unrefined quality is what makes it truly special.
How to Store and Use
Consume by: see date on packaging. Store at +1°C to +5°C. Best enjoyed as a spread, dip, or accompaniment to traditional Bulgarian bread and vegetables.
